I’ve found that when my children take part in the cooking process, they’re far more likely to polish off every last crumb! (even if it’s something they’d usually turn their noses up at!). These crispy courgette fritters are not only easy to make, but they also taste delicious, especially when made with homegrown courgettes from the garden. Plus, they're perfect for those moments when you want a quick and healthy snack but don’t have much time on your hands.

Let’s turn those garden goodies into something delicious!
Step 1 - Grate the courgette and squeeze out any excess moisture using a clean tea towel (kids love this part - it’s like squeezing out a sponge!)
Step 2 - In a bowl, mix the grated courgette, egg, flour, chopped basil, salt, and pepper until everything is combined. The mixture should be thick but not too dry.
Step 3 - Heat a little olive oil in a frying pan over medium heat. Once it’s hot, drop spoonfuls of the mixture into the pan and flatten them slightly with the back of the spoon to form small fritters.
Step 4 - Cook for 2-3 minutes on each side until golden brown and crispy. Flip them gently using a spatula to avoid breaking them apart.
Step 5 - Once cooked, place the fritters on a paper towel to absorb any excess oil. Serve warm with a side of yogurt, tomatoes, or tomato ketchup!
